Description
Buttery, crumbly bars layered with juicy peaches and a hint of cinnamon, making the perfect summer dessert to enjoy chilled or warm.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 4 cups fresh peaches, peeled and sliced (or canned peaches, drained)
- 2 tbsp cornstarch
- 1/4 cup granulated sugar (for peaches)
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until crumbly.
- Press two-thirds of the mixture into the bottom of the prepared baking dish to form a crust.
- In a medium bowl, toss peaches with cornstarch, sugar, and cinnamon until coated.
- Spread peach mixture evenly over the crust.
- Sprinkle remaining crumb mixture evenly over the peaches.
- Bake for 40–45 minutes, or until golden brown and bubbly.
- Cool completely before slicing into bars. Serve warm or chilled.
Notes
- Serve with a scoop of vanilla ice cream for extra indulgence.
- Can be stored in the refrigerator for up to 5 days.
- Substitute nectarines if peaches are not available.
