Description

Buttery, crumbly bars layered with juicy peaches and a hint of cinnamon, making the perfect summer dessert to enjoy chilled or warm.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 cups fresh peaches, peeled and sliced (or canned peaches, drained)
  • 2 tbsp cornstarch
  • 1/4 cup granulated sugar (for peaches)
  • 1 tsp ground cinnamon


Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until crumbly.
  5. Press two-thirds of the mixture into the bottom of the prepared baking dish to form a crust.
  6. In a medium bowl, toss peaches with cornstarch, sugar, and cinnamon until coated.
  7. Spread peach mixture evenly over the crust.
  8. Sprinkle remaining crumb mixture evenly over the peaches.
  9. Bake for 40–45 minutes, or until golden brown and bubbly.
  10. Cool completely before slicing into bars. Serve warm or chilled.

Notes

  • Serve with a scoop of vanilla ice cream for extra indulgence.
  • Can be stored in the refrigerator for up to 5 days.
  • Substitute nectarines if peaches are not available.
