Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme (or 1 tsp fresh)
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley (for garnish)
  • 1/4 cup chopped pecans or walnuts (optional, for crunch)


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or line it with foil for easy cleanup.
  2. Place chicken breasts in the prepared dish and season with salt, pepper, and thyme.
  3. In a small bowl, whisk together cranberry sauce, honey, balsamic vinegar, garlic, olive oil, and Dijon mustard until smooth.
  4. Pour the cranberry-honey mixture evenly over the chicken, turning to coat both sides.
  5. Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbly and slightly caramelized.
