Description

A bright and flavorful one-pan meal featuring tender lemon butter salmon, crispy roasted potatoes, and perfectly seasoned broccoli — an easy, wholesome dinner ready in under 40 minutes.


Ingredients

  • 4 salmon fillets (about 6 oz / 170g each)
  • 1 lb (450g) baby potatoes, halved
  • 2 cups (200g) broccoli florets
  • 3 tbsp olive oil, divided
  • 3 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 tsp honey (optional, for balance)
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • Lemon slices and fresh parsley, for garnish


Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
  2. In a bowl, toss halved potatoes with 1 1/2 tbsp olive oil, paprika, salt, and pepper. Spread on the baking sheet and roast for 15 minutes.
  3. Meanwhile, in another bowl, toss broccoli florets with 1 tbsp olive oil, salt, and thyme.
  4. After 15 minutes, push the potatoes to one side of the baking sheet and add the broccoli.
  5. Place salmon fillets on the other side of the pan. Season with salt and pepper.
  6. In a small bowl, mix melted butter, garlic, lemon juice, lemon zest, remaining olive oil, and honey (if using). Drizzle over the salmon and vegetables.
  7. Return to the oven and roast for 12–15 minutes, or until salmon flakes easily and potatoes are golden.
  8. Remove from the oven, garnish with lemon slices and fresh parsley, and serve immediately.

Notes

  • For extra crispiness, broil the salmon and vegetables for 1–2 minutes at the end.
  • Use asparagus or green beans instead of broccoli for variation.
  • Salmon can be swapped with trout or halibut.
  • Perfect as a light, protein-rich weeknight dinner.
