Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • For the Lemon Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Mix in lemon zest and vanilla extract.
  5. Alternate adding dry ingredients and buttermilk to the batter, beginning and ending with dry ingredients. Stir in lemon juice until just combined.
  6. Divide batter evenly between prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the frosting, beat cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar, then mix in lemon juice and zest. Beat until light and fluffy.
  10. Frost cooled cake layers and spread frosting over the top and sides. Chill for 20–30 minutes before slicing for clean cuts.
