Description

Mediterranean Baked Fish is a light and flavorful dish featuring tender white fish baked with olive oil, tomatoes, garlic, herbs, and lemon, inspired by classic Mediterranean flavors.


Ingredients

  • 1.5 lb white fish fillets (cod, haddock, or halibut)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced olives (Kalamata or black)
  • 1 small red onion, thinly sliced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 lemon, sliced
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Arrange fish fillets in the baking dish in a single layer.
  4. In a bowl, combine olive oil, garlic, tomatoes, olives, onion, oregano, paprika, salt, and pepper.
  5. Spoon the mixture evenly over the fish.
  6. Top with lemon slices.
  7. Cover loosely with foil and bake for 20 minutes.
  8. Remove foil and bake for an additional 5–10 minutes until the fish flakes easily with a fork.
  9. Garnish with fresh parsley before serving.

Notes

  • Serve with rice, quinoa, or crusty bread.
  • Add capers for extra Mediterranean flavor.
  • Do not overbake to keep the fish moist.
