Description
Mediterranean Baked Fish is a light and flavorful dish featuring tender white fish baked with olive oil, tomatoes, garlic, herbs, and lemon, inspired by classic Mediterranean flavors.
Ingredients
- 1.5 lb white fish fillets (cod, haddock, or halibut)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced olives (Kalamata or black)
- 1 small red onion, thinly sliced
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1 lemon, sliced
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking dish with olive oil.
- Arrange fish fillets in the baking dish in a single layer.
- In a bowl, combine olive oil, garlic, tomatoes, olives, onion, oregano, paprika, salt, and pepper.
- Spoon the mixture evenly over the fish.
- Top with lemon slices.
- Cover loosely with foil and bake for 20 minutes.
- Remove foil and bake for an additional 5–10 minutes until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
- Serve with rice, quinoa, or crusty bread.
- Add capers for extra Mediterranean flavor.
- Do not overbake to keep the fish moist.
