Ingredients
- 6 cups diced potatoes (about 5–6 medium potatoes)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup crushed cornflakes or potato chips (optional topping)
- Olives, sliced (for monster “eyes”)
- Green onions, chopped (for monster “hair”)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Boil the diced potatoes in salted water until fork-tender, then drain.
- In a large bowl, mix sour cream, cream cheese, milk, melted butter, garlic powder, onion powder, salt, and pepper until smooth.
- Add the cooked potatoes and stir gently to coat.
- Mix in half of the cheddar and mozzarella cheese.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Top with the remaining cheese.
- Sprinkle crushed cornflakes or chips over the top if using.
- Bake for 25–30 minutes or until hot and bubbly.
- Remove from oven and decorate with olive slices and green onions to create “monster faces.”
