Ingredients

  • 6 cups diced potatoes (about 56 medium potatoes)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup crushed cornflakes or potato chips (optional topping)
  • Olives, sliced (for monster “eyes”)
  • Green onions, chopped (for monster “hair”)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Boil the diced potatoes in salted water until fork-tender, then drain.
  3. In a large bowl, mix sour cream, cream cheese, milk, melted butter, garlic powder, onion powder, salt, and pepper until smooth.
  4. Add the cooked potatoes and stir gently to coat.
  5. Mix in half of the cheddar and mozzarella cheese.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Top with the remaining cheese.
  8. Sprinkle crushed cornflakes or chips over the top if using.
  9. Bake for 25–30 minutes or until hot and bubbly.
  10. Remove from oven and decorate with olive slices and green onions to create “monster faces.”
