Ingredients
- 1 lb boneless, skinless chicken breasts, sliced
- 12 oz fettuccine pasta
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 oz mushrooms, sliced
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- Fresh parsley for garnish (optional)
Instructions
- Cook fettuccine according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then cook until golden and cooked through; remove and set aside.
- In the same skillet, melt butter and sauté mushrooms until tender.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese until the sauce thickens.
- Add lemon zest, lemon juice, and Italian seasoning.
- Return chicken to the skillet and add cooked pasta.
- Toss until everything is well coated in sauce.
- Garnish with parsley and serve immediately.
Notes
- Use fresh Parmesan for the smoothest sauce.
- Do not boil the sauce after adding cheese to prevent separation.
- Add spinach for extra greens.
