Description

Mushroom & Lemon Garlic Chicken Alfredo is a creamy, flavorful pasta dish featuring tender chicken, sautéed mushrooms, and a rich Alfredo sauce brightened with fresh lemon and garlic.


Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced
  • 12 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • Fresh parsley for garnish (optional)


Instructions

  1. Cook fettuccine according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season chicken with salt and pepper, then cook until golden and cooked through; remove and set aside.
  4. In the same skillet, melt butter and sauté mushrooms until tender.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Pour in heavy cream and bring to a gentle simmer.
  7. Stir in Parmesan cheese until the sauce thickens.
  8. Add lemon zest, lemon juice, and Italian seasoning.
  9. Return chicken to the skillet and add cooked pasta.
  10. Toss until everything is well coated in sauce.
  11. Garnish with parsley and serve immediately.

Notes

  • Use fresh Parmesan for the smoothest sauce.
  • Do not boil the sauce after adding cheese to prevent separation.
  • Add spinach for extra greens.
