Ingredients

  • 12 corn tortillas
  • 2 cups New Mexico red chile sauce
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1/2 small onion, finely chopped
  • Salt to taste
  • Optional toppings: chopped lettuce, diced tomatoes


Instructions

  1. Warm the red chile sauce in a saucepan over low heat.
  2. Lightly heat tortillas in a skillet or microwave until pliable.
  3. Place one tortilla on a plate and spread with red chile sauce.
  4. Sprinkle cheese and a little chopped onion on top.
  5. Add another tortilla and repeat layers, finishing with sauce and cheese.
  6. Repeat to make four stacked enchiladas.
  7. In a skillet, heat oil and fry eggs sunny-side up.
  8. Place one fried egg on top of each stack.
  9. Serve immediately with optional toppings.
