Ingredients
- 2 cups shredded coconut (unsweetened, plus extra for rolling)
- 1 cup sweetened condensed milk
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine the softened butter, sweetened condensed milk, powdered sugar, vanilla extract, and a pinch of salt. Mix until smooth and creamy.
- Add the shredded coconut to the mixture and stir until well incorporated.
- Chill the mixture in the refrigerator for about 30 minutes to make it easier to shape.
- Once firm, roll the mixture into small bite-sized balls.
- Roll each ball in shredded coconut until fully coated.
- Place the balls on a parchment-lined tray and refrigerate for at least 1 hour before serving.
