Description

Ingredients
- 2 lbs baby potatoes (halved)
- 3 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano (optional)
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss halved potatoes with olive oil, garlic powder, paprika, oregano, salt, and pepper until evenly coated.
- Sprinkle Parmesan cheese over the potatoes and toss again until well coated.
- Arrange potatoes cut side down on the prepared baking sheet in a single layer.
- Bake for 30-35 minutes, flipping halfway if desired, until potatoes are golden and crispy.
- Remove from oven, sprinkle with fresh parsley, and serve immediately.
Notes
- Use freshly grated Parmesan for best flavor and crispiness.
- For extra crispiness, soak potatoes in cold water for 20 minutes before seasoning, then pat dry.
