Description
Savory chicken breasts rolled with slices of ham, Swiss cheese, and tangy pickles, then baked until golden and melty for a delicious twist on a classic roll-up dish.
Ingredients
- 4 boneless, skinless chicken breasts (pounded thin)
- 4 slices deli ham
- 4 slices Swiss cheese
- 4 dill pickle spears
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko recommended)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (or cooking spray for baking)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Lay each chicken breast flat. Place 1 slice ham, 1 slice Swiss cheese, and 1 pickle spear on top. Roll tightly and secure with toothpicks.
- Set up breading station: flour in one bowl, eggs in another, and breadcrumbs mixed with garlic powder, paprika, salt, and pepper in a third.
- Dredge chicken rolls in flour, dip in egg, then coat in breadcrumbs.
- Place on prepared baking sheet and drizzle with olive oil (or spray with cooking spray).
- Bake for 25–30 minutes, or until chicken is cooked through (165°F/74°C) and golden brown.
- Remove toothpicks, slice, and serve warm.
Notes
- Serve with honey mustard or ranch dipping sauce for extra flavor.
- For a low-carb version, skip the breading and bake chicken roll-ups without coating.
- These can be prepped ahead and refrigerated before baking.
