Description

Pineapple Chicken and Rice is a sweet and savory dish made with tender chicken, juicy pineapple, and fluffy rice simmered together in a flavorful sauce for a fun and comforting meal.


Ingredients

  • 1 lb (450 g) boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/4 cup pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1/2 teaspoon ground ginger
  • Salt and black pepper, to taste
  • 2 tablespoons chopped green onions (optional)


Instructions

  1. Heat olive oil in a large skillet or saucepan over medium heat.
  2. Add chicken pieces, season with salt and pepper, and cook until lightly browned. Remove and set aside.
  3. In the same pan, add onion and sauté until soft.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in rice and cook for 1 minute to lightly toast.
  6. Add chicken broth, pineapple juice, soy sauce, honey, and ground ginger. Stir well.
  7. Return chicken to the pan and add pineapple chunks.
  8. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is cooked.
  9. Remove from heat and let rest for 5 minutes.
  10. Fluff rice with a fork, garnish if desired, and serve warm.

Notes

  • Use jasmine rice for extra aroma.
  • Add red pepper flakes for a spicy kick.
  • Leftovers reheat well and taste even better the next day.
