Description
Pineapple Chicken and Rice is a sweet and savory dish made with tender chicken, juicy pineapple, and fluffy rice simmered together in a flavorful sauce for a fun and comforting meal.
Ingredients
- 1 lb (450 g) boneless skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 1/2 cups chicken broth
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/4 cup pineapple juice
- 2 tablespoons soy sauce
- 1 tablespoon honey or brown sugar
- 1/2 teaspoon ground ginger
- Salt and black pepper, to taste
- 2 tablespoons chopped green onions (optional)
Instructions
- Heat olive oil in a large skillet or saucepan over medium heat.
- Add chicken pieces, season with salt and pepper, and cook until lightly browned. Remove and set aside.
- In the same pan, add onion and sauté until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in rice and cook for 1 minute to lightly toast.
- Add chicken broth, pineapple juice, soy sauce, honey, and ground ginger. Stir well.
- Return chicken to the pan and add pineapple chunks.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is cooked.
- Remove from heat and let rest for 5 minutes.
- Fluff rice with a fork, garnish if desired, and serve warm.
Notes
- Use jasmine rice for extra aroma.
- Add red pepper flakes for a spicy kick.
- Leftovers reheat well and taste even better the next day.
