Description

A flavorful and tropical-inspired one-pan dish made with tender chicken, juicy pineapple, and savory rice — a perfect balance of sweet and savory for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup pineapple juice (from the can or fresh)
  • 1 red bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper
  • 2 green onions, sliced (for garnish)
  • 1 tbsp chopped cilantro (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 5–6 minutes until browned and cooked through. Remove and set aside.
  2. In the same skillet, add onion, garlic, and bell pepper. Sauté for 3–4 minutes until softened.
  3. Stir in uncooked rice and toast for 1–2 minutes, stirring frequently.
  4. Add chicken broth, pineapple juice, soy sauce, honey, ginger, and black pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 15 minutes.
  6. After 15 minutes, stir in the cooked chicken and pineapple chunks. Cover again and cook for an additional 5 minutes, until rice is tender and liquid is absorbed.
  7. Fluff with a fork and garnish with green onions and cilantro before serving.

Notes

  • Use brown rice for a healthier option (increase cooking time by 10–15 minutes).
  • For a spicy kick, add a pinch of red pepper flakes or drizzle with sriracha before serving.
  • This dish works great with shrimp or tofu as a protein alternative.
