- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 tablespoon fresh parsley, chopped
- 1.5 lb (700 g) baby potatoes
- 2 tablespoons olive oil (for potatoes)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons unsalted butter (for potatoes)
Instructions
- Preheat oven to 220°C (425°F).
- Boil baby potatoes in salted water for 15–20 minutes until fork-tender, then drain.
- Place potatoes on a baking sheet, gently smash each one, drizzle with olive oil, and season with salt and pepper.
- Bake potatoes for 20 minutes until crispy, then remove and top with cheddar and Parmesan cheese. Add butter and return to oven for 5 minutes until cheese is melted.
- Meanwhile, heat olive oil in a large skillet over medium-high heat.
- Add ribeye steak bites in a single layer and sear for 2–3 minutes per side until browned.
- Add butter, garlic, and smoked paprika to the skillet and toss steak bites for 1 minute until fragrant.
- Remove from heat, garnish with fresh parsley, and serve steak bites alongside cheesy smashed potatoes.
Notes
- Use high heat for steak to achieve a good sear.
- Do not overcrowd the pan; cook steak in batches if needed.
- You can add mozzarella or Monterey Jack cheese for extra meltiness.
