Description

Tender roasted carrots served over creamy whipped ricotta, drizzled with spicy hot honey for a perfect balance of sweet, savory, and heat.


Ingredients

  • 1 lb carrots, peeled and trimmed
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 cup ricotta cheese
  • 2 tbsp heavy cream
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Fresh herbs (such as parsley or thyme), for garnish


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss carrots with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast for 25–30 minutes, turning halfway through, until tender and caramelized.
  4. Meanwhile, in a food processor, whip ricotta with heavy cream and lemon juice until smooth and fluffy. Season lightly with salt.
  5. In a small saucepan, warm honey and red pepper flakes over low heat for 1–2 minutes to infuse. Do not boil.
  6. Spread whipped ricotta on a serving platter. Arrange roasted carrots on top.
  7. Drizzle with hot honey and garnish with fresh herbs before serving.
