Description
Tender roasted carrots served over creamy whipped ricotta, drizzled with spicy hot honey for a perfect balance of sweet, savory, and heat.
Ingredients
- 1 lb carrots, peeled and trimmed
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 cup ricotta cheese
- 2 tbsp heavy cream
- 1 tbsp lemon juice
- 2 tbsp honey
- 1/2 tsp red pepper flakes (adjust to taste)
- Fresh herbs (such as parsley or thyme), for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss carrots with olive oil, salt, and pepper. Spread evenly on the baking sheet.
- Roast for 25–30 minutes, turning halfway through, until tender and caramelized.
- Meanwhile, in a food processor, whip ricotta with heavy cream and lemon juice until smooth and fluffy. Season lightly with salt.
- In a small saucepan, warm honey and red pepper flakes over low heat for 1–2 minutes to infuse. Do not boil.
- Spread whipped ricotta on a serving platter. Arrange roasted carrots on top.
- Drizzle with hot honey and garnish with fresh herbs before serving.
Notes
- Use rainbow carrots for a colorful presentation.
- Adjust spice level by increasing or reducing red pepper flakes.
