Description

Crispy oven-roasted potatoes tossed in rich garlic butter and finished with savory Parmesan cheese and herbs, making the perfect side dish for any meal.


Ingredients

  • 2 lbs baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 5 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes, then cut them in halves.
  3. In a large bowl, combine melted butter, olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.
  4. Add the potatoes to the bowl and toss until evenly coated.
  5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  6. Roast for 25 minutes, then remove from oven and flip the potatoes.
  7. Sprinkle Parmesan cheese evenly over the potatoes.
  8. Return to the oven and roast for another 15–20 minutes until golden, crispy, and fork-tender.
  9. Remove from oven and garnish with fresh parsley if desired.
  10. Serve hot.

  • For extra crispiness, roast cut-side down.
