Description
Crispy oven-roasted potatoes tossed in rich garlic butter and finished with savory Parmesan cheese and herbs, making the perfect side dish for any meal.
Ingredients
- 2 lbs baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 5 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/2 tsp paprika
- Salt, to taste
- Black pepper, to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the potatoes, then cut them in halves.
- In a large bowl, combine melted butter, olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.
- Add the potatoes to the bowl and toss until evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast for 25 minutes, then remove from oven and flip the potatoes.
- Sprinkle Parmesan cheese evenly over the potatoes.
- Return to the oven and roast for another 15–20 minutes until golden, crispy, and fork-tender.
- Remove from oven and garnish with fresh parsley if desired.
- Serve hot.

- Use freshly grated Parmesan for best flavor.
- For extra crispiness, roast cut-side down.
- Add red pepper flakes for a spicy variation.
