Ingredients

  • 1 head of garlic
  • 1/2 cup extra-virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp fresh lemon juice
  • 1 tsp chopped fresh herbs (such as rosemary, thyme, or parsley)
  • Bread or crackers, for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the top off the head of garlic to expose the cloves. Drizzle with a little olive oil and wrap in foil.
  3. Roast for 35–40 minutes, until the garlic is soft and golden brown. Let cool slightly.
  4. Squeeze the roasted garlic cloves into a small bowl and mash with a fork.
  5. Stir in olive oil, salt, pepper, red pepper flakes (if using), lemon juice, and herbs until well combined.
  6. Serve warm or at room temperature with crusty bread or crackers.
