- 1 lb ground beef or ground lamb
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, corn, carrots)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 1 tbsp flour (optional, for thickening)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 3 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 2 tbsp chopped parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant and translucent.
- Add ground beef, salt, pepper, and thyme. Cook until browned and no longer pink. Drain any excess fat.
- Stir in tomato paste and Worcestershire sauce. Cook for 1–2 minutes.
- Add mixed vegetables and beef broth. Sprinkle in flour if you prefer a thicker filling. Simmer for 5 minutes until slightly reduced.
- Transfer the beef mixture to a greased 9×13-inch baking dish.
- Sprinkle shredded cheddar cheese evenly over the meat mixture.
- Arrange tater tots in a single layer on top.
- Bake uncovered for 25–30 minutes, until the tots are crispy and golden brown.
- Garnish with chopped parsley and serve warm.
Notes
- Use ground lamb for a more traditional Shepherd’s Pie flavor.
- For a creamier filling, add a few tablespoons of sour cream or cream cheese to the meat mixture.
- Can be prepared ahead and refrigerated before baking — perfect for busy weeknights.
