Description

A cozy and comforting twist on the classic Shepherd’s Pie — this Tater Tot Casserole features savory ground beef and vegetables in a rich gravy, topped with golden, crispy tater tots and melted cheese.


Ingredients

  • 1 lb ground beef or ground lamb
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, corn, carrots)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • 1 tbsp flour (optional, for thickening)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 3 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped parsley (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant and translucent.
  3. Add ground beef, salt, pepper, and thyme. Cook until browned and no longer pink. Drain any excess fat.
  4. Stir in tomato paste and Worcestershire sauce. Cook for 1–2 minutes.
  5. Add mixed vegetables and beef broth. Sprinkle in flour if you prefer a thicker filling. Simmer for 5 minutes until slightly reduced.
  6. Transfer the beef mixture to a greased 9×13-inch baking dish.
  7. Sprinkle shredded cheddar cheese evenly over the meat mixture.
  8. Arrange tater tots in a single layer on top.
  9. Bake uncovered for 25–30 minutes, until the tots are crispy and golden brown.
  10. Garnish with chopped parsley and serve warm.

Notes

  • Use ground lamb for a more traditional Shepherd’s Pie flavor.
  • For a creamier filling, add a few tablespoons of sour cream or cream cheese to the meat mixture.
