Ingredients
- 8 slices artisan bread (such as sourdough or brioche)
- 1 lb medium shrimp, peeled and deveined
- 2 tbsp butter (for cooking shrimp)
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 4 tbsp butter (for bread)
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions
- Season shrimp with paprika, salt, and pepper.
- Heat olive oil and 2 tbsp butter in a skillet over medium heat. Add garlic and sauté for 30 seconds.
- Add shrimp and cook for 2–3 minutes per side until pink and cooked through. Remove and chop into bite-sized pieces.
- Preheat a clean skillet or griddle over medium heat.
- Butter one side of each bread slice. Place 4 slices butter-side down on the skillet.
- Top each slice with a mix of mozzarella, cheddar, and Parmesan cheese. Add shrimp and sprinkle with parsley.
- Cover with remaining bread slices, butter-side up.
- Cook for 3–4 minutes per side until golden brown and cheese is melted.
- Slice in half and serve hot.
Notes
- For extra flavor, drizzle sandwiches with a touch of garlic aioli before serving.
- Use brioche for a richer sandwich or sourdough for a tangier bite.
