Description
A hearty and comforting slow cooker beef stew made with tender beef, vegetables, and a rich, savory broth. Perfect for a cozy family meal.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tbsp all-purpose flour
- 2 tbsp olive oil
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 3 garlic cloves, minced
- 1 large onion, chopped
- 4 carrots, sliced
- 3 potatoes, peeled and cubed
- 2 celery stalks, sliced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- In a bowl, toss beef cubes with flour, salt, and pepper until evenly coated.
- Heat olive oil in a skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer to slow cooker.
- Add onion, garlic, carrots, potatoes, and celery to the slow cooker.
- In a separate bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour over the beef and vegetables.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender and vegetables are cooked.
- Remove bay leaves before serving. Adjust seasoning with salt and pepper.
- Garnish with fresh parsley and serve hot with bread or rice.
Notes
- For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp water and stir in 30 minutes before serving.
- You can add peas or green beans during the last 30 minutes of cooking for extra color and flavor.
- Leftovers can be refrigerated for up to 3 days or frozen for 3 months.
