Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 3 garlic cloves, minced
  • 1 large onion, chopped
  • 4 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 2 celery stalks, sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. In a bowl, toss beef cubes with flour, salt, and pepper until evenly coated.
  2. Heat olive oil in a skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer to slow cooker.
  3. Add onion, garlic, carrots, potatoes, and celery to the slow cooker.
  4. In a separate bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour over the beef and vegetables.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender and vegetables are cooked.
  6. Remove bay leaves before serving. Adjust seasoning with salt and pepper.
  7. Garnish with fresh parsley and serve hot with bread or rice.

Notes

  • For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp water and stir in 30 minutes before serving.
  • You can add peas or green beans during the last 30 minutes of cooking for extra color and flavor.
  • Leftovers can be refrigerated for up to 3 days or frozen for 3 months.
