Description

A creamy, flavorful pasta dish made easy in the slow cooker with tender Cajun-seasoned chicken, rich Alfredo sauce, and fettuccine noodles.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 4 cups heavy cream
  • 1 cup chicken broth
  • 1 1/2 cups grated Parmesan cheese
  • 1 lb fettuccine pasta
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken breasts with Cajun seasoning and place them in the slow cooker.
  2. Add olive oil, garlic, heavy cream, and chicken broth. Stir gently to combine.
  3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
  4. Remove chicken, shred or slice, and return to the slow cooker.
  5. Stir in Parmesan cheese until melted and sauce is creamy.
  6. About 30 minutes before serving, cook fettuccine pasta according to package directions until al dente. Drain and add to the slow cooker along with bell peppers.
  7. Mix everything together, adjust seasoning with salt, pepper, and crushed red pepper flakes if desired.
  8. Garnish with parsley and serve hot.

Notes

  • You can substitute shrimp for chicken for a seafood twist.
  • Use half-and-half instead of heavy cream for a lighter version.
  • If sauce is too thick, stir in extra chicken broth or reserved pasta water.
