Description
A creamy, flavorful pasta dish made easy in the slow cooker with tender Cajun-seasoned chicken, rich Alfredo sauce, and fettuccine noodles.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 4 cups heavy cream
- 1 cup chicken broth
- 1 1/2 cups grated Parmesan cheese
- 1 lb fettuccine pasta
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with Cajun seasoning and place them in the slow cooker.
- Add olive oil, garlic, heavy cream, and chicken broth. Stir gently to combine.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
- Remove chicken, shred or slice, and return to the slow cooker.
- Stir in Parmesan cheese until melted and sauce is creamy.
- About 30 minutes before serving, cook fettuccine pasta according to package directions until al dente. Drain and add to the slow cooker along with bell peppers.
- Mix everything together, adjust seasoning with salt, pepper, and crushed red pepper flakes if desired.
- Garnish with parsley and serve hot.
Notes
- You can substitute shrimp for chicken for a seafood twist.
- Use half-and-half instead of heavy cream for a lighter version.
- If sauce is too thick, stir in extra chicken broth or reserved pasta water.
