Description
Smothered Chicken and Rice is a Southern-inspired comfort dish featuring tender, seasoned chicken cooked in a rich, flavorful gravy and served over fluffy rice. It’s hearty, satisfying, and perfect for a cozy family dinner.
Ingredients
- 4 bone-in, skin-on chicken thighs (or breasts)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 cup sliced mushrooms (optional)
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon thyme
- Salt and black pepper to taste
- 2 cups cooked white rice
- Fresh parsley for garnish
Instructions
- Season chicken with paprika, garlic powder, onion powder, thyme, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden brown, about 4–5 minutes per side. Remove and set aside.
- In the same pan, melt butter and sauté onions, bell pepper, mushrooms, and garlic until softened.
- Sprinkle flour over the vegetables and stir for 1 minute to create a roux.
- Gradually whisk in chicken broth and milk until smooth and thickened to form a creamy gravy.
- Return chicken to the skillet, spoon some gravy over the top, and cover. Simmer on low heat for 25–30 minutes, or until chicken is tender and cooked through.
- Serve chicken and gravy over warm cooked rice, garnished with parsley.
Notes
- For a lighter version, use boneless, skinless chicken breasts and low-fat milk.
- Add a pinch of cayenne pepper for a little heat.
- This dish pairs well with steamed green beans or a side salad.
