Description

Ingredients

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 cup sliced mushrooms (optional)
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • Salt and black pepper to taste
  • 2 cups cooked white rice
  • Fresh parsley for garnish


Instructions

  1. Season chicken with paprika, garlic powder, onion powder, thyme, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden brown, about 4–5 minutes per side. Remove and set aside.
  3. In the same pan, melt butter and sauté onions, bell pepper, mushrooms, and garlic until softened.
  4. Sprinkle flour over the vegetables and stir for 1 minute to create a roux.
  5. Gradually whisk in chicken broth and milk until smooth and thickened to form a creamy gravy.
  6. Return chicken to the skillet, spoon some gravy over the top, and cover. Simmer on low heat for 25–30 minutes, or until chicken is tender and cooked through.
  7. Serve chicken and gravy over warm cooked rice, garnished with parsley.

Notes

  • For a lighter version, use boneless, skinless chicken breasts and low-fat milk.
  • Add a pinch of cayenne pepper for a little heat.
  • This dish pairs well with steamed green beans or a side salad.
