A hearty and comforting one-pan stuffed pepper casserole that delivers all the classic flavors of stuffed peppers with seasoned ground beef, rice, tomatoes, and melted cheese—without the extra work.
Ingredients
- 1 lb ground beef
- 3 bell peppers, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked white rice
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 1/2 cups shredded cheddar or mozzarella cheese
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1/2 cup beef broth
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned; drain excess fat.
- Add onion and garlic and sauté until softened.
- Stir in chopped bell peppers and cook for 3–4 minutes.
- Add cooked rice, diced tomatoes, tomato sauce, beef broth, and seasonings.
- Mix well and simmer for 5 minutes.
- Transfer mixture to a greased casserole dish.
- Top evenly with shredded cheese.
- Cover with foil and bake for 25 minutes.
- Uncover and bake an additional 10 minutes until cheese is bubbly.
- Let rest for 5 minutes before serving.
Notes
- Use any color bell peppers for added flavor.
- Ground turkey can be substituted for beef.
- This dish reheats well and is freezer-friendly.
