Description

A hearty pasta dish featuring juicy chicken meatballs smothered in a sweet and tangy BBQ sauce, tossed with pasta for a comforting and flavorful meal.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup BBQ sauce
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 12 oz pasta (penne, rotini, or similar)
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
  3. Form mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Drizzle meatballs with olive oil and bake for 18–20 minutes, until fully cooked through.
  5. Meanwhile, cook pasta according to package directions. Drain and set aside.
  6. In a skillet, combine BBQ sauce, honey, and apple cider vinegar. Simmer over medium heat until slightly thickened.
  7. Add baked meatballs to the skillet and toss to coat in the sauce.
  8. Add cooked pasta to the skillet and mix until everything is evenly coated.
  9. Sprinkle with mozzarella cheese and let it melt. Garnish with parsley before serving.

Notes

  • You can use store-bought or homemade BBQ sauce depending on preference.
  • Adjust sweetness by adding more or less honey to taste.
