Description
A hearty pasta dish featuring juicy chicken meatballs smothered in a sweet and tangy BBQ sauce, tossed with pasta for a comforting and flavorful meal.
Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup BBQ sauce
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 12 oz pasta (penne, rotini, or similar)
- 1/2 cup shredded mozzarella cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
- Form mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Drizzle meatballs with olive oil and bake for 18–20 minutes, until fully cooked through.
- Meanwhile, cook pasta according to package directions. Drain and set aside.
- In a skillet, combine BBQ sauce, honey, and apple cider vinegar. Simmer over medium heat until slightly thickened.
- Add baked meatballs to the skillet and toss to coat in the sauce.
- Add cooked pasta to the skillet and mix until everything is evenly coated.
- Sprinkle with mozzarella cheese and let it melt. Garnish with parsley before serving.
Notes
- You can use store-bought or homemade BBQ sauce depending on preference.
- Adjust sweetness by adding more or less honey to taste.
- This dish pairs well with a crisp side salad or garlic bread.
