Juicy teriyaki-glazed chicken cooked with sweet pineapple and tender vegetables in easy, oven- or grill-ready foil packets for a flavorful, no-mess meal.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breast, cut into chunks
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 red onion, sliced
  • 1/2 cup teriyaki sauce
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • Salt and black pepper to taste
  • Cooking spray or extra oil for foil


Instructions

  1. Preheat oven to 400°F (200°C) or prepare a grill for medium heat.
  2. In a bowl, combine teriyaki sauce, soy sauce, honey, olive oil, garlic, and ginger.
  3. Add chicken to the sauce and toss to coat evenly.
  4. Cut large sheets of foil and lightly grease the center.
  5. Divide chicken, pineapple, bell peppers, broccoli, and onion evenly among foil sheets.
  6. Spoon extra sauce over each packet and season lightly with salt and pepper.
  7. Fold foil tightly to seal packets.
  8. Bake for 25–30 minutes or grill for 20–25 minutes until chicken is cooked through.
  9. Carefully open packets and serve hot.
