Description
A light, savory baked dish made with tender zucchini and creamy cottage cheese, perfect as a healthy main or side dish.
Ingredients
- 3 medium zucchini, grated
- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Salt to taste
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Grate the zucchini and squeeze out excess moisture using a clean towel.
- In a large bowl, combine zucchini, cottage cheese, eggs, olive oil, garlic powder, onion powder, salt, and pepper.
- Stir in mozzarella and Parmesan cheeses.
- Pour mixture into a greased 8×8-inch baking dish and spread evenly.
- Bake uncovered for 35–40 minutes, or until set and lightly golden on top.
- Remove from oven and let rest for 5 minutes.
- Garnish with fresh parsley if desired and serve warm.
Notes
- Be sure to remove as much moisture from zucchini as possible.
- Add red pepper flakes for a spicy variation.
- Can be served as a vegetarian main or side dish.
