Description

A light, savory baked dish made with tender zucchini and creamy cottage cheese, perfect as a healthy main or side dish.


Ingredients

  • 3 medium zucchini, grated
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Salt to taste
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. In a large bowl, combine zucchini, cottage cheese, eggs, olive oil, garlic powder, onion powder, salt, and pepper.
  4. Stir in mozzarella and Parmesan cheeses.
  5. Pour mixture into a greased 8×8-inch baking dish and spread evenly.
  6. Bake uncovered for 35–40 minutes, or until set and lightly golden on top.
  7. Remove from oven and let rest for 5 minutes.
  8. Garnish with fresh parsley if desired and serve warm.

Notes

  • Be sure to remove as much moisture from zucchini as possible.
  • Add red pepper flakes for a spicy variation.
