Ingredients

- 8 oz mascarpone cheese, softened
- 4 oz cream cheese, softened

- For the Crumble:
- 1 cup crushed shortbread cookies or graham crackers
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 3 tablespoons melted unsalted butter
- For Garnish:
- 1 cup fresh blackberries
- Fresh mint leaves (optional)
- Lemon zest (optional)
Instructions
- In a small saucepan, combine the blackberries, granulated sugar, and lemon juice over medium heat.
- Cook for 5-7 minutes until the berries begin to soften.
- Stir in the cornstarch slurry and cook for 1 minute until thickened. Allow the compote to cool completely.
- Beat the mascarpone and cream cheese together until smooth.
- Add the powdered sugar and vanilla extract and mix until fully combined.
- Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
- Mix the crushed cookies, brown sugar, cinnamon, and melted butter to create the crumble.
- In serving glasses, layer crumble, mascarpone cream, blackberry compote, and repeat the layers.
- Finish with mascarpone cream, fresh blackberries, extra crumble, mint leaves, and a little lemon zest if desired.
- Refrigerate for at least 2 hours before serving.
