Ingredients

  • 1 1/2 lbs sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, sliced


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season steak with half of the salt and pepper.
  3. Add steak bites and sear for 2-3 minutes per side until browned. Remove and set aside.
  4. Reduce heat to medium and melt butter in the same skillet.
  5. Cook the butter for 3-4 minutes until golden brown and nutty in aroma.
  6. Add onion and cook until softened, about 3 minutes.
  7. Stir in garlic and cook for 30 seconds.
  8. Add rice and cook for 1 minute, stirring frequently.
  9. Pour in beef broth, Worcestershire sauce, Italian seasoning, remaining salt, and pepper.
  10. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  11. Return steak to the skillet and gently stir into the rice.
  12. Add Parmesan cheese and mix until creamy and well combined.
  13. Garnish with parsley and green onions.
  14. Serve warm.

Notes

  • Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
  • Sirloin, ribeye, or New York strip steak all work well.
  • Do not overcook the steak before returning it to the rice.
  • Mushrooms make a delicious addition to this dish.
