Description

Brown Butter Steak & Potato Bake is a rich and comforting dinner featuring tender steak bites and roasted potatoes tossed in nutty brown butter, garlic, and herbs, then baked until golden and flavorful.


Ingredients

  • 1 1/2 lbs sirloin steak, cut into bite-sized pieces
  • 2 lbs baby Yukon Gold potatoes, halved
  • 6 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese (optional)
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 425°F (220°C) and lightly grease a 9×13-inch baking dish.
  2. Place butter in a saucepan over medium heat and cook until golden brown and fragrant, about 4-5 minutes.
  3. Remove from heat and stir in garlic, thyme, rosemary, paprika, salt, and black pepper.
  4. In a large bowl, toss potatoes with olive oil and half of the brown butter mixture.
  5. Spread potatoes evenly in the baking dish and bake for 20 minutes.
  6. Meanwhile, toss steak bites with the remaining brown butter mixture.
  7. Remove the dish from the oven and add steak to the potatoes.
  8. Stir gently to combine and spread into an even layer.
  9. Return to the oven and bake for 12-15 minutes, or until the steak reaches desired doneness and potatoes are tender.
  10. Sprinkle with Parmesan cheese during the last 5 minutes of baking if using.
  11. Garnish with fresh parsley before serving.

  • Sirloin, ribeye, or New York strip steak all work well in this recipe.
  • Do not overcook the steak to keep it tender and juicy.
  • Cut potatoes into uniform pieces for even roasting.
