Ingredients
- 4 boneless, skinless chicken breasts (or 6 chicken cutlets)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup all-purpose flour (for dredging)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 3 tablespoons capers, drained
- 1/2 cup freshly grated Parmesan cheese
- 2 (4 oz) balls fresh burrata cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- Lemon slices, for garnish
Instructions
- Season the chicken with salt, pepper, garlic powder, and Italian seasoning.
- Lightly dredge each piece in flour, shaking off any excess.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the chicken for 4-5 minutes per side until golden brown and nearly cooked through. Remove and set aside.
- Reduce the heat to medium and melt the butter in the same skillet.
- Add the garlic and cook for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
- Stir in the heavy cream, lemon juice, lemon zest, capers, and Parmesan cheese until smooth.
- Return the chicken to the skillet and simmer for 5-7 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Tear the burrata into large pieces and place it over the chicken. Cover the skillet for 2-3 minutes until the cheese becomes soft and creamy.
- Sprinkle with fresh parsley and basil.
- Garnish with lemon slices and serve immediately with pasta, mashed potatoes, rice, or crusty bread.
