Ingredients
- 1 1/2 lbs Yukon Gold potatoes, peeled and thinly sliced
- 1 lb cooked lobster meat, chopped
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 1/2 cups shredded sharp cheddar cheese
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese, divided
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Melt butter in a saucepan over medium heat.
- Add garlic and cook for 30 seconds until fragrant.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in milk and heavy cream until smooth.
- Add salt, pepper, paprika, and cayenne pepper.
- Cook for 4-5 minutes until the sauce begins to thicken.
- Stir in cheddar cheese, Gruyère cheese, and half of the Parmesan cheese until melted.
- Arrange half of the sliced potatoes in the prepared baking dish.
- Top with half of the lobster meat and one-third of the cheese sauce.
- Repeat with remaining potatoes, lobster, and sauce.
- Sprinkle the remaining Parmesan cheese evenly over the top.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake an additional 20-25 minutes until golden brown and potatoes are tender.
- Allow the casserole to rest for 10 minutes before serving.
- Garnish with parsley and chives.
