Ingredients

  • 1 1/2 lbs Yukon Gold potatoes, peeled and thinly sliced
  • 1 lb cooked lobster meat, chopped
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese, divided
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Melt butter in a saucepan over medium heat.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Whisk in flour and cook for 1 minute.
  5. Gradually whisk in milk and heavy cream until smooth.
  6. Add salt, pepper, paprika, and cayenne pepper.
  7. Cook for 4-5 minutes until the sauce begins to thicken.
  8. Stir in cheddar cheese, Gruyère cheese, and half of the Parmesan cheese until melted.
  9. Arrange half of the sliced potatoes in the prepared baking dish.
  10. Top with half of the lobster meat and one-third of the cheese sauce.
  11. Repeat with remaining potatoes, lobster, and sauce.
  12. Sprinkle the remaining Parmesan cheese evenly over the top.
  13. Cover with foil and bake for 45 minutes.
  14. Remove foil and bake an additional 20-25 minutes until golden brown and potatoes are tender.
  15. Allow the casserole to rest for 10 minutes before serving.
  16. Garnish with parsley and chives.
