Ingredients

  • 1 lb ground beef
  • 2 medium russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1/4 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 8 large flour tortillas
  • 2 green onions, sliced
  • 2 tablespoons chopped fresh cilantro
  • Cooking spray or additional oil for crisping burritos


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
  3. In the same skillet, cook onion for 3-4 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  6. Stir in taco seasoning, water, salt, and black pepper.
  7. Cook for 2-3 minutes until the mixture thickens.
  8. Return potatoes to the skillet and stir to combine.
  9. Remove from heat and mix in sour cream, cheddar cheese, Monterey Jack cheese, green onions, and cilantro.
  10. Warm tortillas slightly to make them easier to roll.
  11. Divide the filling evenly among the tortillas.
  12. Fold in the sides and roll tightly into burritos.
  13. Optional: Place seam-side down in a lightly greased skillet and toast until golden on both sides.
  14. Serve warm.
