Cheesy Potato Beef Burritos are hearty, flavor-packed burritos stuffed with seasoned ground beef, crispy potatoes, melted cheese, and a creamy sauce, all wrapped in warm flour tortillas. Perfect for meal prep, weeknight dinners, or freezer-friendly lunches.
Ingredients
- 1 lb ground beef
- 2 medium russet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 1/4 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 8 large flour tortillas
- 2 green onions, sliced
- 2 tablespoons chopped fresh cilantro
- Cooking spray or additional oil for crisping burritos
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
- In the same skillet, cook onion for 3-4 minutes until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Stir in taco seasoning, water, salt, and black pepper.
- Cook for 2-3 minutes until the mixture thickens.
- Return potatoes to the skillet and stir to combine.
- Remove from heat and mix in sour cream, cheddar cheese, Monterey Jack cheese, green onions, and cilantro.
- Warm tortillas slightly to make them easier to roll.
- Divide the filling evenly among the tortillas.
- Fold in the sides and roll tightly into burritos.
- Optional: Place seam-side down in a lightly greased skillet and toast until golden on both sides.
- Serve warm.

- For extra crispiness, toast the burritos in a skillet after rolling.
- Ground turkey may be substituted for beef.
