Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 cup fresh or frozen cherries, chopped
  • 1 tablespoon all-purpose flour (for coating cherries)
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1/2 teaspoon vanilla extract (for glaze)


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Cut in cold butter until the mixture forms coarse crumbs.
  4. Stir together heavy cream and vanilla extract.
  5. Add the cream mixture to the dry ingredients and gently mix until a soft dough forms.
  6. Toss chopped cherries with 1 tablespoon flour.
  7. Carefully fold the cherries into the biscuit dough.
  8. Turn dough onto a lightly floured surface and pat into a 1-inch-thick rectangle.
  9. Cut into 8 biscuits and place on the prepared baking sheet.
  10. Bake for 14-16 minutes until lightly golden.
  11. Cool biscuits for 10 minutes.
  12. Whisk powdered sugar, cream, and vanilla extract until smooth.
  13. Drizzle the vanilla glaze over the biscuits.
