Ingredients
- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, thinly sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons unsalted butter, cut into small pieces
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Cut four large sheets of heavy-duty aluminum foil.
- Divide zucchini, yellow squash, bell pepper, and cherry tomatoes evenly among the foil sheets.
- Place one cod fillet on top of each vegetable pile.
- In a small bowl, combine olive oil, garlic, oregano, thyme, parsley, paprika, salt, and black pepper.
- Brush the garlic herb mixture evenly over each cod fillet.
- Top each fillet with lemon slices and a few pieces of butter.
- Fold and seal the foil packets tightly to trap steam.
- Place packets on a baking sheet.
- Bake for 18-20 minutes, or until the cod flakes easily with a fork.
- Carefully open packets to avoid steam.
- Garnish with fresh parsley and serve immediately.
