Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, thinly sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons unsalted butter, cut into small pieces
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut four large sheets of heavy-duty aluminum foil.
  3. Divide zucchini, yellow squash, bell pepper, and cherry tomatoes evenly among the foil sheets.
  4. Place one cod fillet on top of each vegetable pile.
  5. In a small bowl, combine olive oil, garlic, oregano, thyme, parsley, paprika, salt, and black pepper.
  6. Brush the garlic herb mixture evenly over each cod fillet.
  7. Top each fillet with lemon slices and a few pieces of butter.
  8. Fold and seal the foil packets tightly to trap steam.
  9. Place packets on a baking sheet.
  10. Bake for 18-20 minutes, or until the cod flakes easily with a fork.
  11. Carefully open packets to avoid steam.
  12. Garnish with fresh parsley and serve immediately.
