Ingredients
- 1 lb lean ground turkey
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 1/2 cups uncooked long-grain white rice
- 3 cups chicken broth
- 2 cups corn kernels (fresh, frozen, or canned, drained)
- 1 chipotle pepper in adobo sauce, minced
- 1 tablespoon adobo sauce
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1 cup shredded Monterey Jack cheese
- 1/2 cup crumbled Cotija cheese
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon fresh lime juice
- Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the ground turkey and cook for 6-8 minutes, breaking it apart until browned.
- Add the onion and cook for 3-4 minutes until softened.
- Stir in the garlic and cook for 30 seconds until fragrant.
- Add the rice, chipotle pepper, adobo sauce, chili powder, smoked paprika, cumin, salt, and black pepper. Stir to coat the rice.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.
- Stir in the corn, heavy cream, sour cream, and Monterey Jack cheese until creamy.
- Cook for 2-3 minutes until the cheese has melted.
- Remove from heat and stir in the lime juice.
- Sprinkle with Cotija cheese and chopped cilantro.
- Serve immediately with lime wedges.
