Ingredients

  • For the Chocolate Cake:

  • 2 large eggs

  • For the Strawberry Buttercream:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup freeze-dried strawberry powder
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional Chocolate Ganache:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Garnish:
  • Fresh strawberries
  • Chocolate shavings (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Beat until smooth.
  4. Gradually stir in the hot coffee until the batter is fully combined.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the buttercream, beat the butter until light and fluffy. Gradually add the powdered sugar, strawberry powder, heavy cream, vanilla, and salt, beating until smooth.
  9. If making the ganache, heat the heavy cream until just simmering, pour it over the chocolate chips, let stand for 2 minutes, then stir until smooth.
  10. Spread buttercream between the cake layers and over the top and sides.
  11. Drizzle the cooled ganache around the edges if desired.
  12. Decorate with fresh strawberries and chocolate shavings before serving.
