Ingredients
- 4 boneless skinless chicken breasts (or 6 chicken thighs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 package (5.2 oz) Garlic & Fine Herbs Boursin cheese
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter
- 2 tablespoons chopped fresh parsley
Instructions
- Season chicken with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 5-6 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium and add butter to the skillet.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Add Boursin cheese and whisk until melted and smooth.
- Stir in heavy cream, Parmesan cheese, and lemon juice.
- Simmer for 2-3 minutes until the sauce thickens slightly.
- Return chicken to the skillet and spoon sauce over the top.
- Cover and simmer for 8-10 minutes, or until chicken reaches 165°F (74°C).
- Garnish with fresh parsley and serve warm.
