Description

Creamy Gruyère Mushroom Chicken is a rich, restaurant-quality skillet dinner featuring tender seared chicken breasts smothered in a creamy Gruyère cheese and garlic mushroom sauce. This elegant one-pan meal is perfect for weeknight dinners or special occasions and pairs beautifully with pasta, mashed potatoes, or rice.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1 1/2 cups freshly grated Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Season chicken with salt, black pepper, paprika, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 5-6 minutes per side until golden brown. Remove and set aside.
  4. Reduce heat to medium and melt butter in the same skillet.
  5. Add mushrooms and shallot, cooking for 5-6 minutes until softened and lightly browned.
  6. Stir in garlic and thyme and cook for 30 seconds.
  7. Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
  8. Whisk in heavy cream and Dijon mustard.
  9. Gradually stir in Gruyère and Parmesan cheeses until the sauce is smooth.
  10. Add lemon juice and stir well.
  11. Return the chicken to the skillet and spoon the sauce over the top.
  12. Cover and simmer for 8-10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  13. Garnish with fresh parsley and serve immediately.

Notes

  • Freshly grated Gruyère melts much more smoothly than pre-shredded cheese.
  • Cremini mushrooms provide a deeper flavor than white button mushrooms.
  • Chicken thighs may be substituted for extra juiciness.
  • Serve over pasta, mashed potatoes, rice, or buttered egg noodles.
  • Store leftovers refrigerated for up to 3 days.
