Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 tablespoons unsalted butter
- 8 oz cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 small shallot, finely diced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1 1/2 cups freshly grated Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Season chicken with salt, black pepper, paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 5-6 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium and melt butter in the same skillet.
- Add mushrooms and shallot, cooking for 5-6 minutes until softened and lightly browned.
- Stir in garlic and thyme and cook for 30 seconds.
- Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
- Whisk in heavy cream and Dijon mustard.
- Gradually stir in Gruyère and Parmesan cheeses until the sauce is smooth.
- Add lemon juice and stir well.
- Return the chicken to the skillet and spoon the sauce over the top.
- Cover and simmer for 8-10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh parsley and serve immediately.

- Freshly grated Gruyère melts much more smoothly than pre-shredded cheese.
- Cremini mushrooms provide a deeper flavor than white button mushrooms.
- Chicken thighs may be substituted for extra juiciness.
