Creamy Herb Butter Pork Medallions are tender pork loin medallions seared until golden and finished in a rich garlic herb butter cream sauce. Ingredients

  • 1 1/2 lbs pork tenderloin, sliced into 1-inch medallions
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Season the pork medallions with salt, black pepper, garlic powder, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the pork for 3-4 minutes per side until golden brown. Remove and set aside.
  4. Reduce heat to medium and melt the butter in the same skillet.
  5. Add the shallot and cook for 2-3 minutes until softened.
  6. Stir in the garlic, Italian seasoning, and thyme. Cook for 30 seconds.
  7. Pour in the chicken broth, scraping up any browned bits from the pan.
  8. Whisk in the heavy cream, Parmesan cheese, Dijon mustard, and lemon juice until smooth.
  9. Simmer for 3-4 minutes until the sauce thickens slightly.
  10. Return the pork medallions to the skillet and spoon the sauce over them.
  11. Cook for 4-6 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  12. Remove from heat and let rest for 3 minutes.
  13. Garnish with fresh parsley and serve immediately.
