Description

Creamy Mushroom Chicken is a rich and comforting one-pan meal featuring juicy pan-seared chicken breasts smothered in a velvety garlic Parmesan mushroom cream sauce. This easy skillet dinner is perfect served with mashed potatoes, pasta, rice, or roasted vegetables.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 oz cremini or baby bella mushrooms, sliced
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 5-6 minutes per side until golden brown. Remove and set aside.
  4. Reduce heat to medium and melt the butter in the same skillet.
  5. Add the mushrooms and onion, cooking for 5-6 minutes until softened and lightly browned.
  6. Stir in the garlic and cook for 30 seconds until fragrant.
  7. Pour in the chicken broth, scraping up the browned bits from the bottom of the skillet.
  8. Stir in the heavy cream, Parmesan cheese, Dijon mustard, and lemon juice.
  9. Simmer for 3-5 minutes until the sauce thickens.
  10. Return the chicken to the skillet and spoon the sauce over the top.
  11. Cover and cook for 6-8 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  12. Garnish with fresh parsley and serve immediately.

  • Use freshly grated Parmesan for the smoothest sauce.
  • Cremini mushrooms provide a deeper flavor than white button mushrooms.
  • Add baby spinach during the final few minutes for extra vegetables.
