Ingredients
- 4 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 small shallot, finely diced
- 3 cups sweet corn kernels (fresh, frozen, or canned)
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
Instructions
- Pat the salmon dry and season with paprika, half the salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add salmon fillets and sear for 3-4 minutes per side until golden and nearly cooked through. Remove and set aside.
- Reduce heat to medium and melt butter in the same skillet.
- Add shallot and cook for 2-3 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add corn kernels and cook for 3-4 minutes.
- Pour in chicken broth and simmer for 3 minutes.
- Stir in heavy cream, remaining salt, thyme, and Parmesan cheese.
- Cook until the sauce thickens slightly, about 4-5 minutes.
- Add lemon juice and stir well.
- Return the salmon to the skillet and spoon sauce over the fillets.
- Simmer for 2-3 minutes until the salmon is fully cooked.
- Garnish with parsley and chives before serving.
