Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 small shallot, finely diced
  • 3 cups sweet corn kernels (fresh, frozen, or canned)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives


Instructions

  1. Pat the salmon dry and season with paprika, half the salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add salmon fillets and sear for 3-4 minutes per side until golden and nearly cooked through. Remove and set aside.
  4. Reduce heat to medium and melt butter in the same skillet.
  5. Add shallot and cook for 2-3 minutes until softened.
  6. Stir in garlic and cook for 30 seconds until fragrant.
  7. Add corn kernels and cook for 3-4 minutes.
  8. Pour in chicken broth and simmer for 3 minutes.
  9. Stir in heavy cream, remaining salt, thyme, and Parmesan cheese.
  10. Cook until the sauce thickens slightly, about 4-5 minutes.
  11. Add lemon juice and stir well.
  12. Return the salmon to the skillet and spoon sauce over the fillets.
  13. Simmer for 2-3 minutes until the salmon is fully cooked.
  14. Garnish with parsley and chives before serving.
