Ingredients
- 2 lbs boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 oz feta cheese, crumbled
- 1/2 cup plain Greek yogurt
- 2 tablespoons cream cheese, softened
- 2 cloves garlic
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil (for whipped feta)
- 1/4 cup water or milk, as needed
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- Lemon wedges for serving
Instructions
- Pat chicken dry and season with paprika, oregano, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook for 5-7 minutes per side until golden brown and cooked through to 165°F (74°C).
- Transfer chicken to a plate and allow it to rest.
- In a food processor, combine feta cheese, Greek yogurt, cream cheese, garlic, lemon juice, and olive oil.
- Blend until smooth and creamy.
- Add water or milk a tablespoon at a time if needed to achieve a silky consistency.
- Spread the whipped feta onto a serving platter or individual plates.
- Slice the chicken and arrange it over the whipped feta.
- Garnish with parsley, dill, and a squeeze of fresh lemon juice.
- Serve immediately.
