Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 oz feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons cream cheese, softened
  • 2 cloves garlic
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil (for whipped feta)
  • 1/4 cup water or milk, as needed
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • Lemon wedges for serving


Instructions

  1. Pat chicken dry and season with paprika, oregano, garlic powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 5-7 minutes per side until golden brown and cooked through to 165°F (74°C).
  4. Transfer chicken to a plate and allow it to rest.
  5. In a food processor, combine feta cheese, Greek yogurt, cream cheese, garlic, lemon juice, and olive oil.
  6. Blend until smooth and creamy.
  7. Add water or milk a tablespoon at a time if needed to achieve a silky consistency.
  8. Spread the whipped feta onto a serving platter or individual plates.
  9. Slice the chicken and arrange it over the whipped feta.
  10. Garnish with parsley, dill, and a squeeze of fresh lemon juice.
  11. Serve immediately.

  • Chicken thighs can be substituted for extra juiciness.
