Ingredients

  • 6 large croissants, torn into bite-sized pieces
  • 4 large eggs
  • 2 cups half-and-half
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon vanilla bean paste (optional)
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar (for brûlée topping)
  • Powdered sugar for garnish (optional)
  • Fresh berries for serving (optional)


Instructions

  1. Grease a 9×13-inch baking dish and arrange the croissant pieces evenly inside.
  2. In a large bowl, whisk together eggs, half-and-half, heavy cream, granulated sugar, brown sugar, vanilla extract, vanilla bean paste, and salt.
  3. Pour the custard mixture evenly over the croissants.
  4. Gently press the croissants into the custard to help absorb the liquid.
  5. Cover and refrigerate for at least 30 minutes or overnight.
  6. Preheat oven to 350°F (175°C).
  7. Bake uncovered for 40-45 minutes until puffed and set in the center.
  8. Allow the bake to cool for 10 minutes.
  9. Sprinkle the top evenly with the remaining granulated sugar.
  10. Use a kitchen torch to caramelize the sugar until golden and crisp. Alternatively, place under a broiler for 1-2 minutes, watching carefully.
  11. Let the topping harden for 2-3 minutes.
  12. Dust with powdered sugar if desired and serve with fresh berries.
