Ingredients
- 6 large croissants, torn into bite-sized pieces
- 4 large eggs
- 2 cups half-and-half
- 1/2 cup heavy cream
- 1/2 cup granulated sugar

- 2 teaspoons vanilla extract
- 1 teaspoon vanilla bean paste (optional)
- 1/4 teaspoon salt
- 1/3 cup granulated sugar (for brûlée topping)

Instructions
- Grease a 9×13-inch baking dish and arrange the croissant pieces evenly inside.
- In a large bowl, whisk together eggs, half-and-half, heavy cream, granulated sugar, brown sugar, vanilla extract, vanilla bean paste, and salt.
- Pour the custard mixture evenly over the croissants.
- Gently press the croissants into the custard to help absorb the liquid.
- Cover and refrigerate for at least 30 minutes or overnight.
- Preheat oven to 350°F (175°C).
- Bake uncovered for 40-45 minutes until puffed and set in the center.
- Allow the bake to cool for 10 minutes.
- Sprinkle the top evenly with the remaining granulated sugar.
- Use a kitchen torch to caramelize the sugar until golden and crisp. Alternatively, place under a broiler for 1-2 minutes, watching carefully.
- Let the topping harden for 2-3 minutes.
- Dust with powdered sugar if desired and serve with fresh berries.
