- 1/2 teaspoon cherry extract (optional)
- Red food coloring (optional)
- For the Topping:
- 1 1/2 cups cherry pie filling
- Fresh cherries with stems
- Chocolate curls or shaved chocolate (optional)
Instructions
- In a small saucepan, simmer the cherry cola until reduced to about 1/4 cup. Cool completely.
- Mix the chocolate cookie crumbs with the melted butter until evenly combined.
- Press the mixture firmly into the bottom of a parchment-lined 9-inch springform pan.
- Freeze the crust for 20 minutes.
- Beat the softened cream cheese until smooth and creamy.
- Add the sweetened condensed milk, cooled reduced cherry cola, vanilla extract, lemon juice, and cherry extract if using. Mix until smooth.
- Fold the whipped cream gently into the cheesecake mixture until fully combined.
- Add a few drops of red food coloring if desired for a brighter pink color.
- Spread the filling evenly over the chilled crust.
- Cover and freeze for at least 6 hours or overnight until firm.
- Before serving, let the cheesecake stand at room temperature for 10-15 minutes.
- Top with cherry pie filling, fresh cherries, and chocolate curls if desired before slicing.
Notes
- Reducing the cherry cola intensifies its flavor without making the filling too thin.
- Full-fat cream cheese provides the creamiest texture.
- Freeze overnight for the cleanest slices.
- Run a knife under hot water and wipe dry between cuts.
- Store tightly covered in the freezer for up to 2 weeks.
