Ingredients

  • Fresh cherries with stems

Instructions

  1. In a small saucepan, simmer the cherry cola until reduced to about 1/4 cup. Cool completely.
  2. Mix the chocolate cookie crumbs with the melted butter until evenly combined.
  3. Press the mixture firmly into the bottom of a parchment-lined 9-inch springform pan.
  4. Freeze the crust for 20 minutes.
  5. Beat the softened cream cheese until smooth and creamy.
  6. Add the sweetened condensed milk, cooled reduced cherry cola, vanilla extract, lemon juice, and cherry extract if using. Mix until smooth.
  7. Fold the whipped cream gently into the cheesecake mixture until fully combined.
  8. Add a few drops of red food coloring if desired for a brighter pink color.
  9. Spread the filling evenly over the chilled crust.
  10. Cover and freeze for at least 6 hours or overnight until firm.
  11. Before serving, let the cheesecake stand at room temperature for 10-15 minutes.
