Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 1/2 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon grated Parmesan cheese (optional)


Instructions

  1. Season the chicken with salt, black pepper, paprika, garlic powder, and half of the Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the halved potatoes cut-side down and cook for 10-12 minutes, stirring occasionally, until golden and nearly tender.
  4. Remove the potatoes from the skillet and set aside.
  5. Add the seasoned chicken to the same skillet and cook for 6-8 minutes until browned and cooked through.
  6. Reduce the heat to medium and add the butter.
  7. Stir in the minced garlic, remaining Italian seasoning, and thyme. Cook for 30 seconds until fragrant.
  8. Return the potatoes to the skillet and toss to coat in the garlic butter sauce.
  9. Stir in the lemon juice and cook for 2-3 minutes until everything is heated through.
  10. Sprinkle with fresh parsley and Parmesan cheese, if desired.
  11. Serve immediately.

  • Baby Yukon Gold potatoes provide the best buttery texture.
