Ingredients

  • 1 1/2 lbs large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 1/2 cups uncooked long-grain white rice
  • 3 cups chicken broth
  • 4 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup hot honey
  • 1/2 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon sliced green onions (optional)
  • Red pepper flakes, for garnish (optional)


Instructions

  1. Season the shrimp with paprika, Italian seasoning, salt, and black pepper.
  2. Heat the olive oil in a large deep skillet over medium-high heat.
  3. Cook the shrimp for 1-2 minutes per side until just pink. Remove and set aside.
  4. Reduce the heat to medium and melt the butter in the same skillet.
  5. Add the onion and cook for 3-4 minutes until softened, then stir in the garlic for 30 seconds.
  6. Add the uncooked rice and stir for 1 minute to lightly toast it.
  7. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes until the rice is tender.
  8. Stir in the heavy cream, Parmesan cheese, hot honey, and lemon juice until smooth and creamy.
  9. Return the shrimp to the skillet and gently fold them into the rice.
  10. Cook for 2 minutes until everything is heated through.
  11. Garnish with parsley, green onions, and red pepper flakes if desired. Serve immediately.
