Ingredients
- 1 1/2 lbs large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 1/2 cups uncooked long-grain white rice
- 3 cups chicken broth
- 4 cloves garlic, minced
- 1 small onion, finely diced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup hot honey
- 1/2 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon sliced green onions (optional)
- Red pepper flakes, for garnish (optional)
Instructions
- Season the shrimp with paprika, Italian seasoning, salt, and black pepper.
- Heat the olive oil in a large deep skillet over medium-high heat.
- Cook the shrimp for 1-2 minutes per side until just pink. Remove and set aside.
- Reduce the heat to medium and melt the butter in the same skillet.
- Add the onion and cook for 3-4 minutes until softened, then stir in the garlic for 30 seconds.
- Add the uncooked rice and stir for 1 minute to lightly toast it.
- Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes until the rice is tender.
- Stir in the heavy cream, Parmesan cheese, hot honey, and lemon juice until smooth and creamy.
- Return the shrimp to the skillet and gently fold them into the rice.
- Cook for 2 minutes until everything is heated through.
- Garnish with parsley, green onions, and red pepper flakes if desired. Serve immediately.
Notes
- Do not overcook the shrimp—they only need a few minutes to stay tender.
- Adjust the amount of hot honey to make the dish milder or spicier.
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- Add spinach, peas, or roasted bell peppers for extra vegetables.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
