Ingredients
- 1 1/2 lbs large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 4 cloves garlic, minced
- 1 1/2 cups uncooked orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon Italian seasoning
- 2 cups baby spinach (optional)
- 2 tablespoons chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Season the shrimp with salt, black pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Cook the shrimp for 1-2 minutes per side until just pink. Remove and set aside.
- Reduce heat to medium and melt the butter in the same skillet.
- Add the garlic and cook for 30 seconds until fragrant.
- Stir in the orzo and cook for 1-2 minutes, stirring frequently, until lightly toasted.
- Pour in the chicken broth and add the Italian seasoning. Bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes, stirring occasionally, until the orzo is tender.
- Stir in the heavy cream, Parmesan cheese, lemon zest, and lemon juice until creamy.
- Add the spinach, if using, and cook until wilted.
- Return the shrimp to the skillet and gently stir to combine.
- Cook for 1-2 minutes until heated through.
- Garnish with chopped parsley and serve with lemon wedges.
Notes
- Do not overcook the shrimp to keep them tender.
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- Add asparagus or peas for additional vegetables.
