Ingredients

  • For the Crust:
  • 2 cups graham cracker crumbs
  • 1/2 cup toasted shredded coconut
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Filling:
  • 8 oz cream cheese, softened
  • 1 cup mango puree (fresh or canned)
  • 1 cup coconut cream
  • 1 can (14 oz) sweetened condensed milk
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • For the Topping:
  • 1 cup whipped cream
  • Fresh mango slices
  • Toasted shredded coconut
  • Lime zest
  • Fresh mint leaves (optional)


Instructions

  1. In a bowl, combine the graham cracker crumbs, toasted coconut, sugar, and melted butter until evenly moistened.
  2. Press the mixture firmly into the bottom and sides of a 9-inch pie dish.
  3. Refrigerate the crust for 20 minutes.
  4. Beat the softened cream cheese until smooth and creamy.
  5. Add the mango puree, coconut cream, sweetened condensed milk, lime juice, and vanilla extract. Beat until smooth.
  6. Gently fold the whipped cream into the mango mixture until fully incorporated.
  7. Pour the filling into the chilled crust and smooth the top.
  8. Cover and refrigerate for at least 6 hours, or overnight, until fully set.
  9. Before serving, decorate with whipped cream, fresh mango slices, toasted coconut, lime zest, and mint if desired.
  10. Slice and serve chilled.
