Ingredients
- 4 salmon fillets, skin removed (about 1 1/2 lbs total)

- 1 teaspoon fresh ginger, grated

- 2 tablespoons olive oil
- 1 1/2 cups jasmine rice, uncooked

- 1 teaspoon sesame oil
- 1 cup baby spinach (optional)
- 1 tablespoon chopped fresh cilantro (optional)

Instructions
- In a small bowl, mix the miso paste, softened butter, soy sauce, honey, rice vinegar, ginger, and garlic until smooth.
- Pat the salmon fillets dry and spread half of the miso butter mixture over the top of each fillet.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the salmon for 3-4 minutes per side until golden and nearly cooked through. Remove and set aside.
- Add the rice to the same skillet and toast for 1-2 minutes, stirring occasionally.
- Pour in the broth and bring to a simmer.
- Reduce heat to low, cover, and cook for 15-18 minutes until the rice is tender and liquid is absorbed.
- Stir the remaining miso butter into the cooked rice until creamy and flavorful.
- Add spinach if using and allow it to wilt into the rice.
- Return the salmon to the skillet and cook for 2-3 minutes until heated through and fully cooked.
- Drizzle with sesame oil and garnish with green onions, sesame seeds, cilantro, and red pepper flakes if desired.
- Serve warm directly from the skillet.
