Description

Nutella Stuffed Pancake Bites are fluffy, bite-sized pancakes with a warm, gooey Nutella center. Perfect for breakfast, brunch, or a sweet snack, these mini treats are easy to make and fun to eat.


Ingredients

  • 1/2 cup Nutella, frozen into small dollops
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or cooking spray for greasing the pan
  • Powdered sugar for garnish (optional)
  • Fresh berries for serving (optional)


Instructions

  1. Line a baking sheet or plate with parchment paper and spoon small dollops of Nutella onto it. Freeze for at least 30 minutes until firm.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, egg, melted butter, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. Heat a lightly greased pancake bite pan, aebleskiver pan, or mini muffin pan over medium heat.
  6. Fill each cavity halfway with pancake batter.
  7. Place a frozen Nutella dollop in the center of each cavity.
  8. Cover with a little more batter until Nutella is fully enclosed.
  9. Cook until golden brown, turning if using a pancake bite pan, or bake at 375°F (190°C) for 12-15 minutes if using a mini muffin pan.
  10. Remove and allow to cool slightly.
  11. Dust with powdered sugar and serve warm with fresh berries if desired.

Notes

  • Freezing the Nutella makes it easier to stuff inside the batter.
  • Do not overfill the cavities to prevent overflow during cooking.
  • Serve immediately while the Nutella center is warm and gooey.
  • Try using peanut butter or cookie butter as an alternative filling.
  • Store leftovers in an airtight container for up to 2 days and reheat before serving.
